INGREDIENTS:
Center cut salmon of choice
Butter
Spinach
Crumbled feta
1 lemon
Lemon vinaigrette of choice
Honey roasted almonds
Seasonings: Old Bay, lemon pepper + garlic salt
SALMON INSTRUCTIONS:
Slice salmon into 2.5 inch filets
Drizzle olive oil lightly onto salmon
Season generously with Old Bay, lemon pepper + garlic salt
Heat up cast iron pan on medium-high heat
Melt a small slice of butter on bottom of cast iron pan
Once butter is melted, cook salmon filets skin side up on the pan (yes, skin side up…not on the pan, we promise it’s worth it!)
Once the salmon is cooked almost all the way through, flip the salmon once in the pan until fully cooked (approximately 8-10 minutes total)
While still in pan, drizzle fresh lemon juice onto top of salmon
ASSEMBLY:
In a bowl: mix spinach, almonds, feta + vinaigrette to your liking
Plate the salad + serve with slice of salmon on top of the bed of spinach
